Blue goat cheese with a very soft texture, intense flavor, and good persistence. Like the Pirâmide cheese, it has been part of Capril do Bosque's portfolio since the beginning and has been delighting Brazilians for over 15 years. It is the best-known blue goat cheese in Brazil. To create this cheese, I was inspired by the process of making English blue cheese, Stilton, where draining, salting, and pressing play a fundamental role in the final result. The blue mold that covers the cheese also appears internally in delicate veins.

Its intensity calls for contrast. It pairs well with Imperial Stout beer and chilled late harvest or fruity white wine. It loves the company of apricots, dried or fresh figs, very sweet grapes, and pear jam.
