Raw, pressed goat cheese, matured for 3 months, with a rind adorned with natural molds from the cellar.

Its fermentation and dough preparation in the tank are quite elaborate, resulting in a very soft, closed texture with tiny holes and a fruity flavor.

The natural fungal coating adds an aroma of damp earth, giving the cheese a captivating complexity.

In April 2024, it was awarded a super gold medal and ranked 5th among the 15 best cheeses at the World Cheese Awards in Brazil, which had almost two thousand entries. In November 2024, it was awarded a gold medal in Portugal at the World Cheese Awards, the largest cheese competition in the world, with more than 4,000 competitors.

The name Giant of the Woods was given in homage to the Sleeping Giant, the symbolic mountain of Joanópolis.
