A soft, non-acidic goat cheese covered with a thin rind of white mold. Creamy, firm texture. Along with Pirâmide, Azul do Bosque, Caprino do Embaixador, and Boursin Condimentado, it forms the quintet of classics from Capril do Bosque, brought together in the portfolio launched in 2008. It was the first fine cheese I developed with goat's milk, approximately 30 years ago.

  • It pairs well with acidic jams, mineral white wines, and white or rosé sparkling wines. It's also very refined for a simple, single-cheese fondue with a delicate honey and almond topping.
