A soft, lactic-fermented goat cheese with a bloomy rind. Matured with a covering of vegetable charcoal and white molds. Highly refined, it was one of the first cheeses to join the Capril do Bosque portfolio approximately 15 years ago and was one of the main reasons for Capril do Bosque's notoriety at a time when goat cheeses were still largely unknown in Brazil. Inspired by the French Valençay, a well-known and respected cheese in France.
